Naan breads

  • 150ml warm milk 2 tsp sugar
  • 15g fresh yeast (for me) or 1 1 / 2 teaspoon instant
  • 450g normal flour
  • ½ teaspoon salt 1 teaspoon
  • baking powder
  • 2 tablespoons of oil (plus some more for oiling the bowl) 150ml

  • melted butter / oil for lubrication of breads (optional)

* Naany can be done with or without eggs. In the latter case you should increase the amount of yogurt / buttermilk about 4 tablespoons (and I just did)

Place milk in a bowl, mix with a teaspoon of sugar and crushed yeast. Mix, let stand for 15-20 minutes, until yeast is dissolved and bubbles will cover the dilution. Sift flour, salt and baking soda into a large bowl (for example, from the mixer). Add the remaining sugar, overgrown dilution, oil, yogurt / buttermilk and egg, if you use (see, note above). Mix ingredients until just combined. Knead about 10 minutes (slightly less electric mixer) until smooth and shiny. Shape into ball, place to grow up in a bowl greased with oil and cover with foil or a damp cloth. Set aside in a warm place for an hour or until doubled in volume (for me it lasted about 75 minutes). If you have a baking stone, also start to heat up the oven (with a stone in the middle) to the maximum temperature. In the absence of stone, tune in the oven (set at a maximum temperature) about 30 minutes before baking, with possibly a thick plate in the middle, reversed to the upside.
When dough has risen, divide into 6 equal parts. Each part roll / stretch the shape of a drop of about 25 cm long and 12.5 wide, optionally spread with butter / oil. Naany put on the hot plate / stone (I baked two cakes in batches), preferably with a shovel, and bake about 3 minutes (on my 250 degrees took a little longer - about 6 minutes).
